A Labor of Love

I’ve made these cookies a few times, and remember helping my mom make them at Christmastime. They are not a very easy cookie to make and I’ve decided that they are definitely a labor of love and will ONLY be made at Christmas or some other special time. This year I made them for Matt’s work.

Almond Rolls

2/3 C. ground almonds

1/2 C. sugar

1/2 C. butter

2 T. milk

Melt all ingredients in small sauce pan on low. Heat oven to 350*.

Grease and flour 3 to 5 4-inch circles on a cookie sheet. If you are cooking these by yourself I recommend only doing three at a time, but if you have a helper you can do up to 5. You might have to do a few batches to figure out what works best for you. Drop heaping teaspoonfuls onto each greased circle._DSC7865e

Bake in preheated oven for 5-10 minutes until golden brown. _DSC7864e 

Let the cookies cool on the pan for about a minute. When you can lift the cookie with a spatula you need to quickly turn each over onto a sheet of aluminum foil or wax paper and roll around a dowel or other round tool (we ended up using a wooden spoon).  Make sure the  flat side of the cookie is facing the dowel. They harden quickly so this process goes fast. That’s why it’s easier to make more with a helper. Let cool on dowel for another minute and remove. Sprinkle with powdered sugar.

Scrape off excess flour and butter from cookie sheet and re-grease and flour between each batch._DSC7859e

And that’s it. It will only take you a few hours to make a plateful :) They’re not the fastest cookies to make but they are oh-so-delicious. And you won’t be able to eat just one!
